Here is my first try at a Funkin.  They are a little different to do.  They are much easier to carve the initial pattern because you don't have the pumpkins juice coming out where you make cuts and destroying the pattern.  The tools I use to carve regular pumpkins were not good for this however.  I got the pattern on there with the xacto knife as always, then I carved it out the rest of the way with a Dremmel Tool.  This was much quicker and easier.  But you must do it in the garage or outside.  It can be messy with the powder it produces.
